What is a dessert that is high in fiber and naturally sweet?
Answer: This is a great question, Yianni. Many of our desserts are high in fiber and all of them are sweetened naturally.
Our tip-top recommendation for a high fiber, naturally sweet dessert is our
Carrot Cake with Cashew Cream Frosting. This is one of the most nourishing desserts you could make. In addition to the excellent fiber provided by the 3 cups of grated carrots this cake also provides fiber in the flour combination of freshly ground whole millet and buckwheat.
The sweetener we use for this recipe is raisin paste. This is made by soaking and blending raisins. Sweeteners don't get more fibrous and natural than that! You might even want to substitute this sweetener in place of maple syrup for some of our other desserts, although you'll have to experiment with quantity to get it just right. The raisin paste is a little less sweet than maple syrup so you may need more depending on your tastes.
