Trouble with the Almond Milk recipe

When I made almond milk according to your recipe, a very small amount went through the cheese cloth to make liquid, even when I mashed it into the cheesecloth. It's mostly solid still sitting on top. It seems like such a waste. Any advice?

Answer I’m sorry to hear that this recipe didn’t work out for you. I’m not sure why this happened. Following these instructions you should wind up with about 2 ½ cups of almond milk and about ½ cup of almond pulp still in the nut bag or cheesecloth. Using a nut bag you should be able to squeeze the excess moisture out of the pulp to get the full yield. You can do this with the cheesecloth too although it may be a little more messy.

Assuming that you have soaked the almonds and used the proportions indicated in the recipe my next thought would be the power of the blender you’re using. I have made this recipe in a standard blender with success but now I use a Vita-Mix blender, which is much stronger than the average blender. You may need to blend for longer or use proportionally less almonds to get them to really break down in your blender.

I wish I could tell you exactly what to try differently but, honestly, I’m not sure. We use this recipe as is in our homes with success.
