Raw Spinach Soup
This raw spinach soup is quick, delicious and easy to make! It’s also loaded with green energy, life force and tons of nutrients! This is another great recipe for loading up on greens - the best detox food of all.
This recipe combines several powerfully detoxifying foods in the form of a delicious raw soup. Spinach soup can be served at room temperature or gently warmed. Gentle heating up to 118 degrees F will preserve the full integrity of the enzymes and nutrients in the raw vegetables. If you don’t have a food thermometer you can test the temperature by seeing if you can hold your finger in it comfortably for several seconds. If you can, it is probably under 118 degrees.
Raw spinach is a great source of iron, vitamins A, C and K, manganese, folate and magnesium, just to name a few of its health benefits. Spinach cleanses your blood and promotes healthy bowel movements and urination. Cucumbers, lime juice, garlic and onions are also strong cleansing foods. The avocado in this soup provides a satisfying and healthy fat source, especially important for women to maintain balanced hormones.
Ingredients:
(use organic whenever possible)
- 1 avocado
- 1 cup water
- 2 cucumbers, unwaxed
- 1 cup fresh, raw spinach
- 2 green onions
- 1 clove garlic
- 1/3 red bell pepper
- 1 teaspoon sea salt (adjust to taste)
- 1 tablespoon fresh lime juice (adjust to taste)
- ¼ teaspoon garam masala or ¼ teaspoon curry (optional, adjust to taste)
Directions:
- Blend ½ cup of water and the avocado in a blender or Vita-Mix blender.
- Add the rest of the ingredients one at a time, blending to desired thickness and thinning with remaining water if desired.
- Serve soup cold or warm. To warm, use your Vita-Mix blender and mix for 2-3 minutes to create hot soup. Or gently and carefully heat on stovetop over low heat. Warm the soup only until you can hold your finger in it without having to pull it out (not over 118 degrees F - to preserve the full enzymes of the raw vegetables).
