Shepherd Pie

Shepherd Pie.

Topping.

5-6 potatoes
1 head of cauliflower.
1 cup of reserved water
2TBSP of oil (my favourite is PC's Omega Oil)

Cover vegetable with water. Bring to a boil. Once cooked, drain and keep one cup of liquid, mash together with oil and reserved water.

Middle

1 bag of frozen corn

Bottom

2lbs of ground meat
2 small portabello mushrooms.
1 cup of cooked quinoa

Cook meat until no longer pink. Add mushroom. Cook until soft.. blend in Quinoa.

Cooking instructions:

Preheat oven at 350

In a 13x9 pan
Layer meat mixture at the bottom
Cover with Corn.
Cover with mashed potato mixture.
Cover pan and cook for 35 min.

Optional topping : Crunchy Kale chip crushed, fresh parsley. fresh ground pepper.

Very bland and flavorless when made as per recipe. Definitely need to add spices and seasonings to taste to brighten it up. Wouldn't make it again.

Spicing it up a little NEW

I haven't tried this recipe myself but based on this comment it needs a little something.

Here are some suggestions for spicing it up:

Include 4-5 whole garlic cloves with the potatoes and cauliflower. If you boil the garlic with the veggies it will become sweet and add a delicious flavor to the mixture. It will mash up well with the potatoes. A little sea salt and pepper wouldn't be a bad idea for this part either.

For the bottom layer I would sautee onions and garlic to add the meat to. Dried basil, thyme, oregano, salt and pepper and/or tamari may be good flavor enhancers to add to the meat while it's cooking.
