Black Bean & Quinoa Salad

quinoa saladBlack bean and quinoa salad is delicious, very easy to make and highly nutritious. Both quinoa and black beans are packed with nutrients that will help you feel satisfied and deeply nourished during your detox. Make a batch, stick it in the fridge and enjoy it for quick snacks or lunches. The Mexican style flavors in this grain salad will improve as it’s chilled.

Black beans and quinoa are both rich in protein, calcium and fiber. The high levels of dietary fiber they provide will help you maintain regular bowel movements as well as clearing your arteries and protecting you from heart disease. These high protein complex carbohydrates release their nutrients slowly, making this salad helpful in regulating blood sugar.

Beauty of the Black Bean

Black beans provide exceptionally high levels of molybdenum, a trace mineral that supports the detoxification of sulfites. Sulfites are added to many foods, beverages and medications as a preservative. Wine, salad bar items, bottled juices, certain medications and many packaged products contain sulfites. Chances are you’ve consumed a good deal of sulfites in your life. The molybdenum content of black beans can help detox that accumulation.

Black Beans are also a rich source of cancer preventing antioxidants. “Research published in the Agriculture and Food Chemistry Journal indicates that black beans are as rich in antioxidant compounds called anthocyanins as grapes and cranberries, fruits long considered antioxidant superstars.”

Ancient Secrets of Quinoa

Quinoa (pronounced keen-wah) is the soul food of the Andes. In recent years it has also become popular as a highly nutritious health food. What was a sacred crop to the Incas has been classified as a "Super Crop" by the United Nations because of its high protein content. (see quinoa for more details.)

This delicious quinoa salad will support your detox with several cleansing ingredients as well. Red onions, garlic, cilantro and limes each provide powerful cleansing effects for your body. Onions and garlic help strip fat from your cells. Cilantro cleanses your blood and removes heavy metal accumulation. And the lime juice will clear toxic accumulation from your liver while alkalizing your system.

You can’t go wrong with this delicious, nutrient dense, easy to make, cleansing quinoa salad!

Ingredients:

(use organic whenever possible)

2 cans black beans (or 3 cups of cooked black beans)
2 cups cooked quinoa*
2 medium tomatoes
1 bunch cilantro
1/4 red onion
1 small clove garlic
1 teaspoon cumin
Juice of 2 limes
sea salt to taste
Directions:
  1. If using canned beans, rinse well (until bubbles disappear).
  2. Mince onion and garlic.
  3. Dice tomatoes and chop cilantro.
  4. Combine all ingredients and stir well.
  5. Chill before serving.
