Black Bean & Quinoa Salad
Black bean and quinoa salad is delicious, very easy to make and highly nutritious. Both quinoa and black beans are packed with nutrients that will help you feel satisfied and deeply nourished during your detox. Make a batch, stick it in the fridge and enjoy it for quick snacks or lunches. The Mexican style flavors in this grain salad will improve as it’s chilled.
Black beans and quinoa are both rich in protein, calcium and fiber. Ingredients:
(use organic whenever possible)
- 2 cans black beans (or 3 cups of cooked black beans)
- 2 cups cooked quinoa*
- 2 medium tomatoes
- 1 bunch cilantro
- 1/4 red onion
- 1 small clove garlic
- 1 teaspoon cumin
- Juice of 2 limes
- sea salt to taste
Directions:
- If using canned beans, rinse well (until bubbles disappear).
- Mince onion and garlic.
- Dice tomatoes and chop cilantro.
- Combine all ingredients and stir well.
- Chill before serving.
