Super Parsley Pesto
Parsley Pesto makes the detox experience so good! This delicious spread is a great way to load up on chlorophyll and get the toxins moving out. Can you imagine eating a whole bundle of parsley in one sitting? It’s so easy when it tastes this good!
Parsley is one of the most powerful detox foods. It is extremely nutritious and deeply cleansing. High in vitamins C and A, chlorophyll, calcium, sodium, magnesium, and iron, it promotes digestion and urination, supports the adrenal glands and detoxifies meat or fish poisoning.
This pesto recipe combines the powerful nourishing and detoxifying properties of parsley with the cleansing action of lemon juice, raw pumpkin seeds and garlic.
Spirulina for Super Power
The addition of a powdered blue-green algae named Spirulina turns this normal parsley pesto into “Super Pesto”. The addition of this potent superfood dramatically boosts the chlorophyll content and detoxifying action of this pesto. I (Jo) felt it immediately when I first added Spirulina to this recipe. This pesto will give you a healthy boost of energy for your day and put a smile on you… inside and out.
Enjoy this pesto as a dip for raw veggies, in wraps or sandwiches, mixed with quinoa, brown rice or rice pasta. Or thin with water or oil to turn it into a delicious salad dressing.
Ingredients:
(use organic ingredients whenever possible)
- 2-3 bunches of fresh parsley
- 1 clove garlic
- ¾ cup raw sunflower seeds
- ¼ cup raw pumpkin seeds
- 3 tablespoons lemon juice
- 1 tablespoon spirulina powder
- salt
- pepper
- up to ½ cup olive oil (add gradually - use only enough to keep it blending)
Directions:
- Coarsely chop parsley and garlic.
- Place parsley and garlic in a food processor along with seeds, lemon juice, spirulina, salt, and pepper.
- Process until smooth adding oil in the top while mixture blends until you reach desired consistency.
