Mustard Greens in Coconut Milk

Have you ever wondered what to do with mustard greens? Because of their strongly pungent flavor, these beautiful greens appear in very few traditional or contemporary recipes.

The authors of the cookbook Greens Glorious Greens comment that “creating an appealing dish with mustard greens is a challenge.” But they successfully overcame that challenge with this amazingly delicious meal. By simmering them in coconut milk their strong flavor is nicely mellowed. The additional spices chosen for this dish create a luxuriously intricate taste bouquet.

Leafy vegetables are the number one most important detox food. Eating a wide variety of them several times per day will enhance the power and efficacy of your detox. These spicy greens are also great additions to our Clean Green Chef Salad. When combined with other more mild greens they add great hints of flavor and additional nutrients.

Ingredients:*

(use organic whenever possible)

2 teaspoons olive oil
1 medium red onion
1 clove of garlic
1 teaspoon brown mustard seeds
1 ½ cups coconut milk
1 teaspoon ground coriander
1/8-1/4 teaspoon cayenne
1 cinnamon stick, broken in half
3 cups peeled and cubed yam
1 large bunch of mustard greens (about ¾ pound)
sea salt to taste
fresh lemon or lime juice to taste

Directions:

  1. Chop onion and mince garlic.
  2. Sauté onions in olive oil until translucent. Then add garlic and mustard seeds and sauté until the seeds begin to pop.
  3. Add coconut milk, coriander, cayenne, cinnamon stick and yam.
  4. Cover and allow to simmer for about 10 minutes, until yam begins to soften.
  5. Strip mustard leaves from stems and chop into bite sized pieces. Discard the stems.
  6. Stir in greens and simmer, covered, over medium-low heat for about 15 minutes. Remove from heat when the greens are tender and the yams are soft.
  7. Adjust salt to taste, remove cinnamon stick and squeeze in lemon or lime juice just before serving.
Serves 4
