Tahini Miso Dressing
We created this tahini miso dressing to go along with our falafel recipe but it’s also delicious on salads, sandwiches and wraps. Making your own dressing is fun and easy. All you need is a blender, a few ingredients and your taste buds!
Tahini is a great base for salad dressings. It offers a rich creaminess and high calcium content that helps to replace cheese and other dairy products. The grounding quality of tahini is also a great balance to the light energy of fresh greens.
Miso is another helpful ingredient for those transitioning from animal foods to plant foods. Its concentrated, salty flavor and high protein content can satisfy your craving for animal protein. Miso is deeply nourishing and cleansing as well.
It creates an alkaline environment in your body that promotes disease resistance. Ancient Japanese tradition says that miso promotes long life and good health.
Miso is a fermented food. This means that it contains live beneficial bacteria that aid in digestion. For this reason it’s important to buy unpasteurized miso and to avoid heating it. Use in dressings and other raw preparations or add just before removing cooked recipes from heat.
Ingredients:
(use organic whenever possible)
- 1/4 cup lemon juice
- 1 tablespoon miso
- 1/2 cup tahini
- olive oil (adjust for consistency)
- purified water (as needed for consistency)
Directions:
- Blend all ingredients in a blender.
- Adjust volumes for taste and consistency.
