Hearty Kale Soup
Kale Soup is a great way to enjoy the abundance of harvest season and stock up on important vitamins and minerals. There’s nothing as comforting and healing as a warm bowl of soup. Especially when it’s filled to the brim with nourishing fresh vegetables. Often, kale soup includes some sort of heavy processed meat, like chourico or linguica. But this recipe offers a clean yet hearty and delicious alternative. This is the perfect soup for your detox and your healthy daily lifestyle. The detoxifying properties of onions and garlic combine beautifully with the exceptional vitamin provided by the kale. Fresh kale is loaded with vitamins C, A, and E, folate, B6, zinc and is very high in calcium. Enjoy the comfort and taste of this delicious soup and rest assured that you’re nourishing your body on every level.
Ingredients: (use organic whenever possible) 
1 tablespoon olive oil- 1 medium red onion
- 4 cloves of garlic
- 2 carrots
- 2 stalks of celery and inner leaves
- 1 large bunch of kale
- 1 teaspoon garlic powder
- 1 teaspoon red pepper flakes
- 1 teaspoon sage leaf
- 4 fresh tomatoes
- 2 cans of kidney beans
- pure water
- sea salt and black pepper to taste
Directions: - Chop onions, garlic, carrots and celery and sauté with olive oil and spices.
- Chop tomatoes and kale and add them to the soup pot.
- Rinse canned beans and add them to the pot.
- Add enough water to reach desired consistency and bring to a boil.
- Once it’s boiling well, lower heat and let simmer for 45 minutes
Serves 6-8 Variations and Ideas: - Add more root vegetables or squashes if you have an abundance of them. Parsnips, beets (red or golden), potatoes, zucchini, summer squash, butter nut squash or acorn squash would all be excellent additions to this soup. Make sure to peel winter squash before putting it in the soup.
- Serve over brown rice, quinoa or rice pasta.
