Gluten Free Cookie Recipes
These gluten free cookie recipes are actually “everything-free.” They are sugar-free, gluten-free and dairy-free. They are all natural, loaded with protein and totally delicious! These recipes are a life saver when you’re detoxing or just wanting to stay on a healthy track. Cookie cravings are no problem as long as you have a few minutes to throw a batch of these in the oven. I (Jo) recently made cookies for a cooking class with 9, 10 and 11 year olds. As I was writing the recipe on the blackboard, the kids were copying it down in their journals. One of the girls in the group said, “Hey, there’s no sugar in these cookies!” Then another kid said, “What a minute, there’s no flour in these cookies!” Somebody else said, “There’s not even any butter or eggs in these cookies!” They were shocked and amazed and a little bit skeptical. I explained to the kids that I had swapped out the less healthy ingredients of a regular cookie with more nourishing choices. Ground up nuts and arrowroot powder replaced the flour. Maple syrup replaced the sugar. And coconut oil replaced the butter. They decided to trust me and go through with the experiment. At the end of class they got to eat their cookies and they loved them! These gluten free cookie recipes can be made with a different flavor each time. Have fun experimenting with the ones you like the best. Whatever flavors you choose, they are sure to be a hit, so make a nice big batch!
Basic Cookie Recipe
Ingredients:(use organic whenever possible) - 1/2 cup coconut oil (room temperature)
- 1/3 cup maple syrup
- 2 cups raw nuts(use pecans, almonds, cashews, walnuts or any combination of these)
- 1 1/2 cups arrowroot powder or tapioca starch
- 1/4 teaspoon sea salt
- water to consistency
Directions:- Preheat oven to 350 degrees F.
- Cream together coconut oil and maple syrup in a large bowl by hand or with an electric mixer. Make sure to get all the lumps out.
- Coarsely grind nuts in a food processor.
- Add the rest of the dry ingredients to the food processor and pulse a few times to mix.
- Stir the contents of the food processor into the wet ingredients until well mixed.
- Add water as needed to create firm cookie dough.
- Form into small cookies 1/2 inch thick on oiled cookie sheet and bake at for 10-12 minutes or until slightly brown on the edges.
Makes 2 dozen cookies
Other Gluten Free Cookie Recipes
Use the basic recipe above and simply add the following ingredients for new flavors!
Chocolate Cookies
Add ½ cup of carob chips or raw cacao nibs, or ¼ cup of raw cacao powder, into the dry ingredients.
Ginger Cherry Cookies
Add ½ cup dried cherries and 2 teaspoons of grated, fresh ginger into the dry ingredients.
Cinnamon Raisin Cookies
Add ½ cup raisins and 1 teaspoon of cinnamon into the dry ingredients.
Chai Spice Cookies
Add ½ teaspoon each of cinnamon and ginger, ¼ teaspoon each of cloves, cardamom and nutmeg to dry ingredients. Add 1 teaspoon of vanilla to wet ingredients.
