Buckwheat Pancakes
Yes! You can eat pancakes on your detox!! These buckwheat pancakes won’t clog you up with all that white flour and sugar. In fact, these pancakes are a truly nourishing way to start your day.
Freshly ground oats, buckwheat and nuts make up the base of these pancakes. A Vita-Mix blender is the best tool for making your own ground flours. You can adjust the texture and quality of the pancakes by adjusting the amount of water. A thick batter will make thick hearty pancakes. Adding more water will make thinner, more flexible pancakes.
There are a lot of delicious ways to eat buckwheat pancakes. Top them with coconut oil and 100% grade B maple syrup. Grade B maple syrup is less refined than grade A and therefore retains more rich vitamins and minerals. All-fruit jelly and tahini is another great topping. Almond butter and just a touch of agave nectar are delicious as well. And, of course, fresh berries in season are always awesome on top of pancakes.

Ingredients:
(use organic whenever possible)
- 1/2 cup rolled oats
- 1/2 cup buckwheat groats
- 1/4 cup raw nuts (use almonds, cashews or walnuts)
- 1/4 cup arrowroot powder or tapioca starch
- 1/4 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 banana
- 1 cup water or more for desired consistency
- Coconut oil for skillet
- 100% grade B maple syrup
Directions:
- Place oats, buckwheat, nuts, arrowroot, baking soda, and cinnamon in a food processor or blender. Process until powdered.
- Mash half of a banana in a medium mixing bowl with a fork.
- Add dry ingredients to the banana and mix together.
- Add water and stir until smooth. Batter should be somewhat thin like regular pancake batter.
- Heat skillet well. Melt coconut oil in the skillet and pour batter in as you normally would to make pancakes.
Variations: for more nutrients and yumminess you can add berries, chopped apples, carob chips, crushed walnuts, etc. to the batter.
