Raw Kale and Avocado Salad
This avocado salad makes a tasty light meal that features the raw potential of rubbed kale. Rubbing kale with sea salt breaks down its cell walls releasing the uncompromised nutrition and enzyme content of this special food.
This salad combines the cleansing properties of kale, sea salt, and lemon juice with the healthy essential fats of avocados and flax oil. The tomatoes add extra vitamins and antioxidants. And the optional sprouted lentils significantly boost this salad’s dietary fiber and protein content.
Kale is one of our favorite detox foods. It’s rich in several essential nutrients, high in dietary fiber and low in calories, making it a super cleansing food. Rubbing kale is fun and rewarding, knowing that you’re releasing this food’s full nutrient potential.
Take the opportunity to bring your attention to the kale as you’re massaging the sea salt into it. Notice how it changes in color. Think about the wonderful ways it’s about to benefit and nourish your body. Even try saying “thank you,” if you’re so inclined. The kale will appreciate it!
Ingredients:
(use organic ingredients whenever possible)
- 1 bunch kale
- ¼ teaspoon sea salt
- 1 avocado
- 2 medium tomatoes
- 2 cups sprouted lentils (optional)
- 1/4 cup sesame seeds
- 2 tablespoons flax oil
- 1 tablespoons lemon juice
- 1 tablespoons chopped fresh mint or fresh basil
Directions:
- Wash kale and remove stems by either cutting along the spine or grabbing from the base of leaf and pulling along the stem toward the top, stripping the leaf from the spine. Chop kale into small pieces.
- Place in a large bowl and sprinkle with sea salt.
- Massage the salt into the kale until it turns bright green and goes limp as though it's been cooked.
- Dice tomatoes and avocados.
- Chop fresh herbs.
- Add all ingredients to the kale in the large bowl and toss until well mixed.
